Easy Fluffy Pancakes

Easy, fluffy pancakes with simple ingredients. Add chocolate chips or blueberries to make them extra special.

  • 1 cup Flour
  • 2 Tbsp Sugar
  • 1 Tbsp Baking Powder
  • 1/2 tsp Salt
  • 1 Egg
  • 1 cup Milk
  • 2 Tbsp Vegetable Oil


  1. Mix first 4 ingredients in a bowl.

  2. In a medium bowl, beat egg, milk, and oil with whisk until blended.

  3. Stir flour mixture into wet mixture.

  4. Heat griddle or skillet until hot (I usually heat to around 375oF). Spray with cooking spray. Ladle approximately 1/4 cup batter onto skillet.

  5. *Optional* If you want to add chocolate chips or blueberries to individual pancakes, this is when I add them.

  6. Cook until bubbles form on tops and then flip to brown the other side.  Usually 1-2 minutes per side.

Recipe Notes

If you want to make an entire batch of chocolate chip pancakes, you could add the chocolate chips to the batter before cooking.

For thicker fluffy pancakes, let the batter sit for a couple minutes before cooking.

I usually double this recipe and store the leftovers between wax paper in the refrigerator. I heat up the pancakes in the toaster to give a little crisper pancake.
