Quick and Easy Egg Salad

A quick and easy, creamy egg salad that uses just a few basic ingredients.

  • 8 Eggs, Hard Boiled
  • 1/2 cup Mayonnaise
  • 1 teaspoon Prepared Yellow Mustard
  • 1/4 cup Chopped Green Onion
  • 1/4 teaspoon Paprika
  • Salt and Pepper to taste


  1. Peel and chop hard boiled eggs and place in a bowl. You can also mash the eggs in the bowl with a fork.

  2. Stir in mayonnaise, mustard and green onion. Season with paprika, salt, and pepper.

  3. Stir and serve on your favorite bread or crackers.

Recipe Notes

A lot of time I just portion it down for 1 person and make it for lunch for myself. It's a quick and easy sandwich and I can add a salad or chips for a decent lunch.

Also, I sometimes use onion powder instead of green onion.
