Taco and Potato Casserole

I know this recipe may sound a little odd but it is delicious! This taco and potato casserole recipe is tasty, easy and cheesy! The leftovers are great the next day too but we usually don’t have any leftovers. It is a favorite for the kids and adults alike.

This taco and potato casserole recipe is easy and cheesy! The leftovers are great the next day too but we usually don't have any!

Ingredients
  • 1 pkg Au Gratin Scalloped Potatoes
  • 2 1/4 cups Boiling water
  • 2/3 cup Milk
  • 1 lb Ground Beef
  • 1 pkg Taco Seasoning
  • 2 cups Cheddar Cheese, shredded divided
Instructions
  1. Preheat oven to 400oF.

  2. Cook and drain ground beef. Add taco seasoning. (If you have trouble mixing in the seasoning, add a little water).

  3. Mix potatoes, sauce mix (from potato box), boiling water and milk in a greased 2 qt. casserole dish.

  4. Stir in ground beef and 1 1/2 cups cheese.

  5. Bake uncovered for 45-60 minutes or until top is golden brown and potatoes are cooked. Sprinkle with remaining cheese.

  6. Let stand 5 minutes before serving and serve with sour cream.

Recipe Notes

I used sharp cheddar cheese for a stronger cheese flavor.

You could add corn or tomatoes for different flavors.

This taco and potato casserole taste great reheated the next day....if you have any leftovers!
