Stove Top Roasted Red Potatoes

If you don’t have time to roast potatoes in the oven or if your oven is already in use, these Stove Top Roasted Red Potatoes are delicious! They have the crispy texture of oven roasted potatoes but are cooked in a skillet on your stove top! If you don't have time to roast potatoes in the oven or if your oven is already in use, these Stove Top Roasted Red Potatoes are delicious!

Ingredients
  • 6 Red Potatoes, large
  • 3 Tbsp Butter
  • 2 tsp Salt
  • 1 tsp Pepper
  • 3/4 tsp Dried Parsley
  • 1/2 tsp Dried Basil
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
Instructions
  1. Wash the potatoes well and cut into bite-size pieces. Put them in a glass microwave safe bowl and microwave for 10 minutes.

  2. Remove from microwave and allow to cool for a few minutes. *The bowl will be hot. Use oven mitts to remove*

  3. Heat a skillet over medium heat and add the butter. Sauté the potatoes and add the seasonings to taste.

  4. Cook for about 10-15 minutes until the potatoes are softened and browned. Taste throughout cooking and add additional seasonings if needed.

Recipe Notes

The recipe calls for red potatoes but I don't always have those on hand. Russet potatoes work great too.

We like our potatoes crispy so it will take a longer cook time to get them browned. If you prefer them softer, cook for the shorter amount of time.

You can cover them while sauteing to reduce the cook time.

Our family also loves cheese so I added some shredded cheese before serving.
