I love potatoes and I always have chicken breasts on hand so a lot of times I steer towards chicken and potatoes for dinner. I am always looking for new recipes since, to be honest, chicken and potatoes can get a little boring. This tasty easy baked chicken and potatoes recipe is just like it says – easy. I also love that I can cook it in one pan – fewer dishes is always a win!
This easy, tasty baked chicken and potatoes is a great one pan recipe.
- 4 Bone-in Chicken Breast Halves, skin removed
- 3 Potatoes, unpeeled, cut into 1-inch cubes
- 1 Red or Green Pepper, cut into 1 x 1/2 inch pieces
- 1 Onion, medium, cut into 8 wedges
- 2 Tbsp Butter or margarine, melted
- 1/4 cup Grated Parmesan Cheese
- 1 tsp Garlic Powder
- 1 tsp Paprika

Heat oven to 400oF. Spray 15 x 10 x 1 inch baking pan with nonstick cooking spray.

Place chicken breasts on the pan. Place potatoes, bell pepper and onion on the pan with the chicken.

Pour melted butter over chicken and vegetables.

In a small bowl, combine cheese, garlic powder, and paprika; sprinkle over chicken and vegetables.

Bake at 400oF for 30-35 minutes or until chicken is fork tender and juices run clear, stirring vegetables once halfway through cooking
You can also use boneless, skinless chicken breasts. Depending on the thickness of your chicken breasts, you may have to adjust the cooking time by either adding them in after you have already started the vegetables. You also cook pull the chicken off early and let it rest while the vegetables finish cooking.
