This simple bbq chicken burrito recipe is a family favorite. Top with sour cream and serve with a salad for an easy meal.

Ingredients
  • 4 Burrito shells
  • 4 Chicken Breasts, boneless, skinless
  • BBQ sauce
  • 2 cups Cheddar cheese, shredded divided
  • Olive Oil
  • Salt & Pepper
  • Green Pepper, cut into strips
  • Onion, sliced
  • Sour Cream
Instructions
  1. Preheat oven to 350oF. Grease 9 x 13 pan and set aside.

  2. Heat olive oil over medium-high heat. Season chicken breasts on each side with salt and pepper. Cook about 4-5 minutes on each side until cooked through (165oF)

  3. If using green peppers and onions, saute over medium heat until browned.

  4. Once cooked, let the chicken rest for a couple minutes and then slice into thin pieces.

  5. Once chicken, peppers, and onions are ready, you can start assembling. Start with a burrito and add chicken, vegetables, bbq sauce, and cheese. Depending on each person's taste, you can add as much or as little toppings as they like.

  6. Roll the burritos, place them in the greased pan and top with bbq sauce. I roll the burritos by folding in the left and right sides. Then fold the bottom up over the toppings and tuck it under the toppings. Then roll until it forms a neat burrito.

  7. Cover with tin foil and bake for about 20 minutes. 

  8. Remove tin foil and top with additional shredded cheese. Broil for approximately 5 minutes until cheese is melted and browned. Serve with sour cream.

Recipe Notes

Use as few or as many vegetables as you want. I personally like green peppers and onions in my burrito but the rest of my family likes just the chicken, bbq sauce, and cheese. You could also use red peppers.

For an extra shortcut, you could use pre-cooked chicken strips.

    1. We all love them. One of the main reasons I like them is that you can personalize each burrito so I can have veggies in mine while the rest of the family doesn’t have to.
